Can I create, generate somehow an Email History/Email History, activity log file/Deleted emails History file or something in Gmail so that I could prove I

have deleted specific emails containing sensitive personal information/data for a person? This is about GDPR. (General Data Protection Regulation)

I haven't seen that case before but the deleted mails can be recovered (you need to be very good at IT to do that)
