Uninstall Outlook email?

Hi, I'm new here, thanks for having me.
I have a new computer and trying to set up the Email. I would like to keep using Microsofts 'Mail', as I'm used to it. The problem is it keeps 'asking' (forcing) me to use the newer 'Outlook' which I do not like! I've tried unistalling the new outlook, but it keeps coming back every time I turn the computer off, then back on again!
Is there a way I can prevent this?

Of course, yes. You can use more ethical and adequate operating system. For example, Linux as an option. And of course more adequate and ethical mail services. It's inexpensive.

But:
There is no way to permanently keep the Mail app, as Microsoft has pulled the plug. It will finally stop working by the end of 2024. Microsoft has decreed that Mail will be replaced by the new Outlook.
