If you filter on the server but then can't see (in the client) what gets filtered that's hardly helpful.

I think which approach you use depends a lot on whether you're a "leave everything on the server and use IMAP" person, or a "download everything and organise it locally in a client" person. Doing some of each sounds to me like a bad idea.
