Or Google greylisted it, and forced Fastmail to retry.

I've not seen headers from one of the outgoing emails delayed by FM, but my guess is that they hold it back before sending it to the outgoing server as that would be done in their own custom code rather than Postfix. If they do hold it back in the outgoing server it wont be possible to tell, from the Received headers, where the delay occured.
