Is the message flagged/pinned by any chance?
I haven't tested this myself — I would think that it
shouldn't affect messages in the trash — but the settings for the Trash folder in
Settings->Folders does specify that only unpinned messages are affected, in the same way as for the setting on any other folder.
Might also be worth checking the
Only purge messages marked as IMAP deleted setting while you're in there and make sure that isn't set either.
