I have a catch-all alias in one of my domains and receive very few spam/phishing emails there, unlike at some of my "individual" addresses. Your mileage may vary.
By definition a catch-all alias receives email sent to any address at the domain, which means it can't receive less email than if you just had one address at the same domain. Lots and lots of SPAM and phishing emails are sent to addresses like [email protected] or [email protected] If you don't have those addresses you won't get those emails.
