It was the "older, less secure apps/services"...

It was the "older, less secure apps/services" that threw me.

I didn't think that "older" applied to Outlook 365.

Setting up an App Password got things working again.

And imap.aim.com and smtp.aim.com still work too. :)

I tried setting up POP in both Outlook 365 and GMail.
Maybe it's just my accounts.
I thought that it might be my ISP (Shaw.ca), but I would think that wouldn't...
